Line Cook
Alta West AdamsAlta is a chef-driven, scratch kitchen led by Chef-Owner Keith Corbin. Our food is rooted in California ingredients and shaped by the cultures that influence Los Angeles, migration, memory, and fire. We are looking for cooks who care about consistency, discipline, cleanliness, and executing recipes the right way every service.
This role is for someone who understands that great cooking comes from preparation, repetition, focus, and respect for the food.
What We’re Looking For
Must have prior line cook experience in a chef-driven, scratch kitchen.
Strong knife skills and foundational cooking technique.
Ability to follow recipes exactly and execute dishes consistently.
Strong understanding of prep lists, portioning, labeling, dating, and product rotation.
Strong sense of cleanliness, organization, and station discipline.
Ability to season, cook, and plate according to established standards.
Ability to work quickly and calmly under pressure.
Ability to take direction and respond professionally to feedback.
Strong communication skills.
Availability to work nights, weekends, and holidays.
Experience with live fire, seasonal ingredients, composed plating, or shared-plate service.
Food handler certification or ServSafe certification.
Experience working in a high-standard kitchen with daily prep and service execution.
This role requires the ability to:
Stand and walk for extended periods during prep and service.
Lift, carry, push, or pull up to 50 pounds as needed.
Bend, reach, squat, twist, and move safely in a fast-paced kitchen.
Work around heat, steam, smoke, sharp tools, open flames, and hot equipment.
Use knives, kitchen tools, and commercial cooking equipment safely.
Work in refrigerated areas, dry storage, and hot kitchen conditions.
Maintain focus and stamina during long shifts.
Perform repetitive motions, including chopping, stirring, lifting, plating, and cleaning.
